To play through my favourite game one final time, Paper Mario The Thousand Year-Door.
If somehow I have a short amount of time to not even get the chance, although I think I would still consider TTYD if my GC and game were available, then...I have no idea.

Hmm, this is actually a tough one. For starters, I can't decide if I'd want to play a single player game or something with friends so I can share my last gaming moments with people on a closer level. 
Since I think it's interesting to consider the last game under both of those scenarios and I can't be bothered to try making my mind up on one or the other, here's what I'd maybe choose:
Single player - LittleBigPlanet 2
Multiplayer - Phogs (this is single player but I played it exclusively in co-op so I'd want to experience this one again the same way I did the first time)
